Creamy, Crunchy Coleslaw | Real. Simple. Vegan.
- 1/2 head yellow cabbage
- 1/5 head purple cabbage
- 1 carrot (Large)
- 1 cup Veganaise (or another vegan mayo)
- 2 tsp celery salt
- 2 tsp apple cider vinegar
- 3 tbsp maple syrup
Finely shred or thinly chop cabbages and carrot and place in large bowl.
In another bowl, combine vegan mayo, celery salt, apple cider vinegar and maple syrup.
Blend vegetables with dressing and voilà!
Begin with 1/4 head of yellow cabbage. If coleslaw is too runny, add another 1/2 head.
