Simmering Broth

  • 4 cups vegetable broth
  • 3 cups water
  • 1/4 cup soy sauce
  • 1/2 tbsp cumin
  • 1 tsp cayenne powder


  • 1 cup vital wheat gluten
  • 1/4 cup chickpea flour
  • 1/2 cup vegetable broth
  • 1/2 tbsp chili powder
  • 2 tsp garlic salt
  • 1 1/2 tsp onion powder
  • 1 1/2 tbsp cumin
  • 1 tsp paprika
  • 1/4 tsp cayenne powder


  1. Add broth ingredients to a large saucepan and bring to a boil. Once a rolling boil is reached, turn down heat to simmer.

  2. Meanwhile in a large bowl, combine all dry seitan ingredients and spices. 

  3. Once dry ingredients are incorporated, add in 1/2 cup vegetable broth, blend together and knead until you have a firm ball.

  4. Break off small chunks, about the size of a ping pong ball, and place all of them into the simmering broth.

  5. Simmer the seitan for 1 hour.

  6. Remove from heat and drain.

  7. Place the seitan into a food processor and pulse until it resembles the texture of ground beef.

  8. The seitan meat is ready to eat! Add it to taco shells and top with onions, spinach, tomatoes, avocados, salsa and other toppings of your choice!

Recipe Notes

To make the recipe soy-free, swap out the soy sauce for tamari.
