Now that it’s summer, we’ve been all about the tacos and taco salads. Earlier in the season, we came up with this super delish vegan taco meat that truly is easy, healthy and has all natural ingredients. If you need a quick dinner idea for the family, this is the one. Your kids won’t notice it’s not meat! Buen Provecho!

Mushroom & Walnut Taco Meat | Real. Simple. Vegan.


Ingredients

  • 7 white or cremini mushrooms
  • 2 cups raw walnuts
  • 1 /2 tbsp garlic salt
  • 1/2 tbsp garlic powder
  • 1 tbsp cumin
  • 1 tsp chili powder
  • 1 tsp onion powder
  • 1/2 tsp cayenne pepper powder
  • 1/2 tsp paprika
  • 2 tbsp avocado or olive oil

Instructions

  1. Boil walnuts for 30 minutes.

  2. In the meantime, wash mushrooms then place in food processor with the spices and oil.

  3. Drain the walnuts and add to food processor.

  4. Pulse repeatedly while checking on consistency between pulses. Repeat until your mixture has the consistency of ground beef.

  5. Cook in a frying pan or skillet on medium heat until taco meat reaches your preferred temperature.

Recipe Notes

Do not over-pulse. Over-pulsing will leave you with a mushy, paté outcome rather than the ground beef consistency.
