This coconut granola is easy, healthy and delicious with big satisfying clusters.Take it as a grab-and-go snack on a hike, add it to yogurt and berries for a parfait or enjoy as a bowl of cereal with your favourite kind of milk topped with ripe, sliced fruit.
Below I listed my favourite fruits, nuts and seeds to toss into this hearty snack, but the beauty of granola is that once you have your perfectly cooked oat mixture, you can throw in anything you like to change it up.
Try it with our vanilla almond milk!
Vegan Coconut Granola | Real. Simple. Vegan.
- 2 cups rolled oats
- 2 1/4 cups more rolled oats. Yep!
- 3/4 cup real maple syrup
- 1/2 cup coconut oil virgin
- 1 /4 cup water
- 2 tbsp vanilla extract
- 3 cups shaved coconut pieces
- 1 cup pepitas
- 1 cup sunflower seeds
- 1 cup shaved almonds
- 1 cup finely chopped dried papaya
- 1 cup raisins
Preheat oven to 230℉.
In a food processor, blend 2 1/4 cups rolled oats until it looks like a powder.
Add the powdered oats to a bowl with 2 cups of rolled oats, pepitas, sunflower seeds, shaved almonds and blend with a wooden spoon. (We don't add the shaved coconut and dried fruit until later) Set aside.
In a saucepan, bring to a boil maple syrup, coconut oil, water and vanilla, stirring constantly. When it reaches a rolling boil, immediately remove from heat.
Add the hot liquid mixture to the dry oat, nut and seed bowl. Blend everything together until consistently covered.
On two cookie sheets, lay parchment paper.
Spread the uncooked granola across both cookie sheets and flatten out so it looks like a giant, sticky granola bar on each.
Place in oven for 80 minutes. Flip at 40 minutes and try not to break the granola apart too much. This will help you get those big, satisfying clusters.
Remove from oven. The granola will need to cool. Before it does, you may notice that it isn't overly crunchy. This will come as it cools.
Mix in shaved coconut, raisins, papaya and any other dried fruit you wish.
*Note: The dried fruit is added at the end so it doesn't become tough from the oven.
