Double Chocolate Cookies | Real. Simple. Vegan.
- 1 cup vegan butter I use Bécel brand
- 1 cup brown sugar
- 1 cup white sugar
- 1 tbsp flax seed meal
- 3 tbsp water
- 1 tsp vanilla
- 3 tbsp cocoa powder
- 2 1/2 cups flour
- 1 tsp baking powder
- 1 cup chocolate chips dairy-free
Preheat oven to 350℉.
Cover baking sheet with parchment paper to prevent your cookies from sticking.
Blend flaxseed meal and water. Set aside for 2-3 minutes.
In bowl, blend vegan butter, sugars and vanilla until smooth.
Add in the flaxseed and water mixture.
Mix flour, baking powder and cocoa powder in separate bowl, then add to wet mixture.
Once wet and dry mixtures are thoroughly incorporated, add in chocolate chips.
Slightly flatten cookie dough balls to give the oven a head start, do not leave in sphere/ball shape.
Place on cookie sheet.
Bake for 10 minutes.
Remove from oven and let sit on pan for 1 minute before placing on cooling tray.
Be sure you flatten out your cookie dough balls a little bit so they are still thick, but not entirely flat. The dough is thicker so they need a head start.
Do not melt butter.
If you do not have parchment paper, you may use cooking spray or use a non-stick pan.
*Disclaimer: At not point am I saying this double chocolate cookie recipe is a “healthy recipe,” but I am definitely saying it is delicious, cruelty-free and will take care of your current chocolate craving struggle. Sometimes a girl’s gotta treat herself. xo
