Something I used to love as a vegetarian was cinnamon french toast. It’s probably been over two years since I’ve indulged in this breakfast delight. I kind of forgot about it since I wasn’t buying eggs anymore. Until… YESTERDAY when my fab cousin-in-law who is now following a vegan diet (yay lady!) asked me for a french toast recipe. We both refuse to buy that carton of weird vegan egg. Like… I can’t even. I was excited to partake in a new kitchen experiment to make vegan french toast.

Cinnamon French Toast
- 4 slices bread
- 6 tbsp coconut milk
- 3 tbsp flaxseed meal
- 1 1/2 tsp cinnamon
Preheat griddle to medium or medium-high heat.
In a bowl mix coconut milk, flaxseed meal and cinnamon.
Let mixture stand for 3 minutes.
Spread mixture on both sides of the bread. It is thick, so dunking won't work. Spread that stuff!
Put on heated griddle.
Before flipping, make sure the first side of the bread is no longer gooey.
EAT! Pour on your maple syrup and enjoy!
