Golden Cashew Coconut Curry | Real. Simple. Vegan.
- 2 1/2 cups coconut milk
- 1 1/2 cups water
- 1/4 cup maple syrup
- 1 1/2 tbsp soy sauce
- 1 1/2 tbsp onion powder
- 1 1/2 tbsp garlic powder
- 1/2 cup basil paste or 1/2 cup very finely diced basil leaves
- 1/2 cup cashews
- 2 1/4 tbsp curry powder
- 1 head broccoli (chopped)
- 1 brick tofu (firm, cubed)
- 1/2 cup chickpeas
- rice or quinoa (cooked separately)
Put all ingredients in a large pot and simmer until broccoli is cooked.
Pour over a bed of quinoa or rice.
