These Coconut Carrot Cake Protein Bites are perfect to eat on the run. They’re much more nutrient-dense than a prepackaged, sugar-laden granola bar.

Coconut 'Carrot Cake' Protein Bites | Real. Simple. Vegan.

  • 1/4 cup pecans
  • 1 cup dates
  • 1 tbsp cinnamon
  • 4 tbsp hemp hearts
  • 5 tbsp flaxseed meal
  • 1/4 cup shredded carrots
  • 1/2 cup shredded coconut
  1. In a food processors, combine all ingredients and 1/4 cup of the shredded coconut.

  2. Once fully incorporated, roll into bite-sized balls.

  3. Roll the bites in the remaining coconut.

  4. Store in fridge.
