Looking to jazz up your breakfast but don’t have a ton of time? This Strawberry Vanilla Chia Pudding is naturally sweet and easy to make but feels special all at the same time!
Strawberry Vanilla Chia Pudding
- 4 frozen strawberries
- 1 tbsp water
- 3/4 cup vanilla almond milk (or any vanilla plant milk)
- 1 1/2 tsp vanilla
- 1 tbsp maple syrup
- 1/4 cup chia seeds

Place the four frozen strawberries and one tablespoon of water in a bowl. Cover and microwave for 3 minutes.

Remove strawberries from microwave and mash with a fork thoroughly until a purée forms.

Blend the strawberry purée, milk, vanilla and maple syrup.

Once consistent, add in chia seeds and stir.

Let stand for 90 minutes.

Stir at 5 minutes and then again at 10 minutes.
Optional: When it’s ready to eat, top the pudding off with hemp hearts for added protein or freshly sliced strawberries for added sweetness.
