This Pumpkin Pie Chia Pudding offers a tasty little twist to the regular old pud’n.
Pumpkin Pie Chia Pudding | Real. Simple. Vegan.
- 1/4 cup chia seeds
- 1 cup almond milk (or any plant milk)
- 2 tbsp puréed pumpkin (canned is fine) (unsweetened.)
- 1/8 tsp nutmeg
- 3/4 tsp cinnamon
- 1 tbsp maple syrup
- 1 tbsp hemp hearts
Blend milk, pumpkin, spices and maple syrup until consistent.
Add in chia seeds and stir.
Let sit for 90 minutes to thicken.
Stir after 5 minutes and then again at 10 minutes.
When it’s ready to eat, toss on the hemp hearts for a burst of added protein.
If you use canned pumpkin, be sure that you don’t accidentally grab pumpkin pie filling. The cans look similar and are in the same section. The pumpkin pie filling will have unwanted and unhealthy additives.
