Golden Cashew Coconut Curry | Real. Simple. Vegan.

  • 2 1/2 cups coconut milk
  • 1 1/2 cups water
  • 1/4 cup maple syrup
  • 1 1/2 tbsp soy sauce
  • 1 1/2 tbsp onion powder
  • 1 1/2 tbsp garlic powder
  • 1/2 cup basil paste or 1/2 cup very finely diced basil leaves
  • 1/2 cup cashews
  • 2 1/4 tbsp curry powder
  • 1 head broccoli ((chopped))
  • 1 brick tofu ((firm, cubed))
  • 1/2 cup chickpeas
  • rice or quinoa ((cooked separately))
  1. Put all ingredients in a large pot and simmer until broccoli is cooked.

  2. Pour over a bed of quinoa or rice.
