Making this 5-Minute Vegan Pesto is a breeze. I always used to enjoy pesto on pasta as a vegetarian but after transitioning to a vegan diet, I had to come up with  a dairy-free option.  This recipe is one of those reliable dishes that promises satisfaction and is a nice change from a tomato or cream sauce. It’s simple but bursting with flavour. I’ve enjoyed this recipe for dipping my bread and tossing in my pasta.

This 5-Minute Pesto is also chock-full of protein with nuts and hemp hearts. You’ll notice typical pesto has pine nuts only but I’ve split them with walnuts to reduce cost and increase protein content.

  • 2 cups basil leaves (You can leave the stems on too)
  • 1/4 cup pine nuts
  • 1/4 cup walnuts
  • 1/2 cup olive oil
  • 1/4 cup hemp hearts
  • 2 tsp salt
  • 1 tbsp minced garlic
  1. Purée all ingredients in a food processor.

Feel free to experiment with your favourite oil!
