These are hands-down the best vegan chocolate chip cookies. They turn out every time and they’re always a crowd-pleaser!
Growing up, my mom was not only famous for her apple pie, but also her chocolate chip cookies. She would make them any time we had friends over and they were grabbed up by our stubby-fingers and gobbled down till there were none left.
We entered these cookies in the county fair and won the first-place ribbon… and I believe $1.75. Cha-Ching!
Her recipe came from our tattered Harrowsmith cookbook from the early 90s complete with a broken spine and a cover that was hanging on by a few threads. All signs of a well-used cookbook! I made these chewy chocolate chip cookies so many times, to this day I remember the page number- p.174.
However, when I moved to a vegan lifestyle, I needed to overhaul the recipe. To my surprise, they turned out just as well. Not only are they delish, but the new vegan recipe is so much more reliable. Growing up, when I tried to make them with eggs and butter, sometimes they’d be flat and other times too dry. They would only turn out if I was lucky.
But now that I’ve switched to a flaxseed mixture to substitute eggs, every batch has been moist and perfectly shaped. Best part? Since there aren’t raw eggs, you can eat as much cookie dough as you want! No judgement here!
