Transitioning from vegetarian to vegan wasn’t too bad. I’d been meat-free for over 10 years, so removing dairy and eggs was a small step. I already found eggs and drinking milk unappealing but milk chocolate was the treat I found most challenging to give up. What softened the blow was finding other ways to make chocolatey treats that didn’t involve dairy like this recipe.
You can cut the finished product into squares or roll it into bite-sized chocolate truffles covered in coconut shavings.
Vegan Chocolate Fudge | Real. Simple. Vegan.
- 1/2 cup coconut oil (virgin)
- 1/2 cup almond butter (natural)
- 1/2 cup cocoa powder
- 1/4 cup maple syrup
- 2 tbsp hemp hearts
- 1/2 cup coconut shavings (unsweetened)
Melt coconut oil in the microwave.
Blend coconut oil with almond butter, cocoa powder and maple syrup.
Flatten in a pan or roll into bite-sized balls.
Roll balls or cover pan with coconut shavings.
Keep refrigerated and serve chilled.
